Try this tonight...

Preheat oven to 180 degrees. Peel kumera and slice in to 2cm thick slices. Spray pan with Coconut Spray Oil and sprinkle with sea salt and ground pepper. Lay Kumera onto pan, repeat spray and sprinkle. Bake for around 1/2 hour until soft and browned. So so good. Excellent companion to fish and salad.

Save the Fairtrade banana!

Unless sales of Fairtrade bananas increase soon, they won't be available in New Zealand for much longer. This is bad news for both Fairtrade supporters and the banana growers in Ecuador who are counting on Fairtrade to help them work their way out of poverty.
