FYI - About Zentrofan Flour

Zentrofan milled whole wheat flour is luxuriously soft, yet full of whole grain nutrients.

Zentrofan flour is genuinely whole grain.  It is air-milled by spiraling the grain inside a stone cavity.  Centrifugal force pushes kernels against the stone cavity.  Centrifugal force pushes kernels against the stone and the movement of air keeps the flour cool, preventing the valuable nutrients from being destroyed by heat.  The flour is very finely ground, resulting in a much lighter and softer baked product than other whole grain flours.  Zentrofan milled flour is about 6% drier than other flours, so use a little more liquid in your baking.
