Carrot Cake with Agave Syrup

Serves 8

1 cup wholemeal spelt flour
1 cup brown rice flour
½ tsp sea salt
1 tsp each coriander and grated fresh ginger
2 tsp cinnamon
¼ – ½ cup apple juice
½ cup rice bran oil
2 tsp natural vanilla essence
1 tsp aluminium free baking powder
½ cup chopped nuts – walnuts and/or almonds
2 cups grated carrots
½ soaked raisins or sultanas
²/³ cup ‘Loving Earth’ organic dark agave syrup

Preheat oven to 180 °C.
Sift dry ingredients and mix together.
Add oil and stir well.
Add remaining ingredients and beat well by hand.
Pour into a well oiled cake pan.
Send your love into the cake.
Bake 1 hour. Enjoy!
