Coconut Butter Biscuits

1/2 cup butter
1 cup unrefined sugar (or replace 1/2 the sugar with 1/4 tsp stevia powder)
4 eggs
1/2 tsp vanilla
1/2 cup sifted coconut flour
2 cups shredded or flaked coconut

Mix together butter, sugar, eggs, and vanilla. Stir in coconut flour and coconut. Drop spoon size mounds 3cm apart on a greased biscuit tray. Bake at 190°C for 18-20 minutes or until golden brown. Remove from biscuit tray immediately and cool on wire rack.

Make with 2 dozen biscuits.
