Kokako Organic Carrot & Walnut Cake

We just can't get enough of Kokako's organic carrot cake.  Made with premium ingredients this morsel of goodness is a real favourite with the Huckleberry Farms and Harvest staff.  We've managed to wrestle the recipe from them and have pleasure in sharing it with you. Happy Baking!!

Dry Ingredients:
3/4 cup white spelt flour
3/4 cup wholemeal spelt flour
1/2 tsp ground cinnamon
1 tsp ground all spice
1 tsp organic ground ginger
1 tsp organic baking powder
1 tsp baking soda
1 cup organic sugar
2/3 chopped walnuts

Wet Ingredients:
4 cups grated organic peeled carrots
3 organic free range eggs
1 cup organic sunflower oil
1 tsp pure vanilla extract

Icing Ingredients:
250g soft cream cheese
20g icing sugar agave
1/3 cup chopped walnuts

1.  Preheat oven to 170c.  Oil a regular sized cake tin and line with baking paper.

2.  Mix all the dry ingredients together in a large mixing bowl until well combined.

3.  Add the wet ingredients and gently mix until just combined.  Pour into prepared cake tin and smooth the top over.

5.  Bake for around 50 minutes to 1 hour or until you can place a skewer into the middle of the cake and it comes out clean.

6.  Allow to cool before placing on a cake rack the bottom side up.
