GLUTEN FREE!!!

Serves: 8    Ready in: 80 minutes

6 Organic eggs, beaten
500g Golden Sugar
150g Organic butter, softened
3 tbsp Ceres Organics Rata Kamahi Honeyy
1 Lime, zested
1 tsp Nutmeg, grated
1 tsp Cardamom Seeds, gound
250g Almonds, chopped
200g Polenta
1 tsp Blue Agave Syrup
125g Candied orange peel, chopped

1. Preheat oven to 150°C
2. In an electric mixer, beat the eggs and sugar until thick
3. Add the butter, honey, lime zest and spices while beating
4. Fold in the almonds, polenta, agave syrup and candied orange
5. Pour into a 30cm lined and greased spring form tin
6. Bake for 110 minutes in a fan forced oven
7. Allow to cool for 30 minutes, then cut into wedges and serve.
