Whole Orange Muffin

Makes: 12          Ready in: 45 minutes

Fragrant and moist! This delicious muffin maintains its texture, hot or cold. The goodness of organic ingredients plus extra flavour and fibre from Ceres Organics LSA make for a wholesome treat.

1 Organic orange, medium size
180g Golden Sugar
1 Organic egg
50ml Rice Dream Original Enriched
100g Organic butter
200g White Stoneground Flour
2 tbsp LSA
1 tsp Raising Powder (aluminium free)
1 tsp Baking soda
80g Sultanas
      Icing Sugar, for dusting

1. Preheat oven to 200°C and grease a muffin tin.
2. Cut the unpeeled orange into chunks and remove pips. Put orange chucks and sugar in a blender and process until orange is finely chopped. Add in egg, milk and butter and blend until all ingredients are combined.
3. Sift flour, baking powder and baking soda into a mixing bowl and add the LSA. Pour the orange mixture in the centre and sprinkle over the sultanas. With a few swift strokes, fold the mixture until barely combine and still lumpy.
4. Spoon into muffin tin and bake for 15-20 minutes until golden, firm and springy to the touch.
5. Leave to cool in tin for 10 minutes. Turn out onto a wire rack. Dust with icing sugar.
6. Serve with a refreshing cup of Planet Organic Green Tea.
