Grey Lynn Imperial Toasted Muesli

The base recipe for muesli is very simple, rolled oats combined with a mixture of dried fruit, nuts and seeds.  To this can be added any number of interesting ingredients to increase variety and explore new taste sensations.

  • 1 1/2 cups rolled oats
  • 2 1/2 cups jumbo oats
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup cashew nuts
  • 1/2 cup gogi berries
  • 1/2 cup cranberries
  • 1/2 cup hulled sesame seeds
  • 1 cup sultanas
  • Pinch of sea salt
  • 1/2 cup sunflower oil
  • 1/2 cup honey

  1. Preheat oven to 140°c
  2. Heat honey and sunflower oil in a small saucepan over a low heat.  Simmer for 4 minutes.
  3. In a large bowl combine the oats, nuts and seeds.  Add warm honey mixture to the bowl and mix thoroughly to coat the dry ingredients.
  4. Spoon the oat mixture onto a large roasting tray and spread evenly.
  5. Bake for 20 minutes or until golden brown, stirring every 5 minutes with a float edged spoon.  It is important to keep an eye on the toasted muesli to ensure it doesn't burn.
  6. Remove from oven and set aside for 30 minutes to cool.
  7. Add the dried fruit and stir to combine.
