Maple & Coconut Breakfast Quinoa

1/4 cup red quinoa, thoroughly rinsed
1/4 cup milk or any milk substitute
1/4 cup water
1/2 teaspoon vanilla extract
2 tablespoons LSA
1 tablespoon fine coconut
1 tablespoon flaxseed oil
1 tablespoon maple syrup
1/4 cup unsweetened yogurt
1 banana, sliced
Handful of goji berries, soaked overnight and drained (or any fresh berries in summer)
  1. Add the quinoa , milk and water to a medium saucepan.  Bring to the boil, reduce heat and simmer for 15 minutes.  Remove from heat and leave to sit for 2-3 minutes, until liquid is absorbed.
  2. Stir in the LSA, coconut, flaxseed oil and maple syrup.  Mix thoroughly.
  3. Serve into bowl and top with yogurt, and fruit.
