Blueberry, Pear & Apple Crumble Recipe

Blueberry, Pear and Apple
Crumble: Serves 6

2 cups blueberries
4 apples
4 pears and any other fruit
you might like to add
1 tablespoon lemon juice
a small pinch of salt
2/3 cup flour (use brown rice flour for a gluten free option)
¾ cup brown sugar
½ cup oats or quinoa flakes (for a gluten free option)
½ teaspoon cinnamon
4½ tablespoons butter

Preheat oven. Wash fruit and cut up the pears and
apples into chunks. Combine the fruit, add lemon
juice and a small pinch of salt and put into a baking
dish. In a food processor, pulse together the
remaining ingredients until they resemble coarse
breadcrumbs. Cover the berries with the topping
and bake for thirty minutes until the top has
browned and the fruit is bubbling. Can be served
hot or at room temperature. Goes very well with
organic ice cream or cashew nut cream for a
vegan alternative.
