Crunchy outside, soft in side! These little Italian numbers are packed with organic goodness. They're sure to be a hit with everyone.

150g Whole Almonds
250g Icing Sugar
3 tbsp Organic Cocoa
2   Organic Egg Whites (Huckleberries recommend Freckels/BioLand Organic Free Range Eggs)

1. Preheat oven to 200°C and line 2 baking trays.
2. Finely grind almonds in processor.
3. Add in the icing sugar, cocoa, rice flour and egg whites. Blend until you get a thick paste consistency.
4. Spoon mixture into a piping bag (or use a plastic bag and cut a small hole in one corner).
5. Pipe small blobs onto lined baking trays and bake for 15 minutes or until tops become crunchy. It is normal for tops to crack.
6. Leave to cool on trays for 10 minutes before transferring to a serving plate or container.
