1 cup uncooked couscous

1 cup brown lentils

1tbsp olive oil
-
1 lemon
-
1 cup cherry tomatoes
-
2 cups rocket or mixed greens

1/4 cup celery
-
1/2 cup feta
-
Dash of salt

Dressing:
-
2 garlic cloves
-
1/4 cup olive oil
-
1/2 tsp Dijon mustard
-
1/4 cup red wine vinegar

Salt & pepper to taste

Bring 1 & 1/2 cups of water to a boil with olive oil and salt. Then add couscous and lower heat until water is absorbed (takes approximately 2 minutes).

Cook lentils in 4 cups of water until lentils are soft (takes approximately 25 minutes).

In a large bowl mix couscous and lentils. Pour lemon juice over mixture.

Combine ingredients for dressing, mix well and pour dressing over couscous and lentils.

Toss tomatoes, greens, celery and feta to give your salad a beautiful colour.
