GLUTEN FREE!!!
A light, nourishing dish, big on taste and nutrition. Serve as entree, side dish or snack. Citrus Tahini is delicious as a dip, sauce or dressing for salads, chips and vegetables.

Serves: 4-5   Ready in: 24 hours (prepare the day before to allow for drying time)

Salmon Jerky

450g Fresh salmon, skin removed
1/2 cup Ceres Organics Tamari Soy Sauce
1 tsp Planet Organic Ginger Powder
3 cloves Garlic, peeled and crushed
1 tsp Ceres Organics Rata Kamahi Honey
1 tbsp Ceres Organics Sesame Seeds

1. Cut salmon into bite-size strips, abut 2cm thick by 5cm long. Marinate in mixture of Tamari soy sauce, ginger, garlic and honey for about 10 minutes.
2. Roll salmon strips in sesame seeds and arrange on over rack. Slow cook in oven at 65°C for about 24 hours or in a dehydrator.
3. Serve on a bed of rocked with Citrus Tahini as dip.

Will keep for a week if stored in an airtight container in the fridge.


Citrus Tahini
6 tbsp Ceres Organics Hulled Tahini
6 tbsp Lemon juice
6 tbsp Orange juice
2 tbsp Ceres Organics Olive Oil
1/4 tsp Natural Value Stoneground Mustard
1/8 tsp Ceres Organics Herb Salt

Simply mix together all ingredients.
Note: Adjust consistency by adding a little water - less to thicken and more to lighten.

Will keep for 3 days if stored in an airtight container in the fridge.
