Cream of Shiitake Soup

Cream of Shiitake Soup: Serves 4

1 tablespoon toasted sesame oil
1 clove elephant garlic, diced
¼ cup millet
1 stalk celery, cut on diagonal ½ inch thick
3 green onions, thinly sliced
4 small dried shiitake mushrooms, without stems
2 carrots, cut in 1 inch chunks
½ teaspoon coriander
1 tablespoon tamari
6 cups water
¼ teaspoon orange zest (grated organic orange rind)
1 spring onion thinly sliced for garnish

Heat oil in a soup pot. Sauté garlic for 3 minutes.
Add millet, green onions, celery, mushrooms,
carrots, coriander, tamari, and water. Bring to
a boil, cover, and reduce heat. Simmer for 45
minutes. Remove soup from heat. Stir in orange
zest and allow flavour to permeate the soup for
5 minutes. Taste and adjust seasonings. Before
serving, garnish with the reserved green onion.
