Fresh Vegetarian Taco

The yummiest taco in the world!

Ingredients:
  • Blue or Yellow Garden of Eatin taco shells
  • 1 Can of Natural Value Kidney beans
  • 1 Can of Natural Value Pinto beans
  • 1½ cups Lotus Textured Soy Protein
  • 2 Tbls Tio Pablo Mexican Seasoning Mix
  • 1½ cup shredded lettuce
  • 2 tomatoes
  • 1 red capsicum
  • 1 green capsicum
  • 1 red onion
  • 1 ripe avocado
  • 1 cup grated vegetarian cheese
  • 1 jar of Rio Delores salsa sour cream to taste

Preheat oven to 180°C. On medium heat, put kidney and pinto beans (with juice) into a pot and bring to a boil. Add textured soy protein and Mexican seasoning mix and lower heat. Stir frequently as not to burn the bottom.

Meanwhile, while the bean mix is simmering, cut lettuce, tomatoes, capsicum, onion and avocado and arrange on large plate for easy selecting. Put taco shells into oven for about 10 min just to warm and crisp slightly. Grate cheese.

To assemble: Put a scoop of bean mixture into the taco shell and layer with the cut veggies, cheese,
sour cream and salsa. Sooooooooo goooooood!
